Potato Chops


 
A favourite dish of the Mumbai East Indians - made of mashed potato and stuffed beef mince.  My mom makes the best Potato Chops.  Whenever I go to Mumbai - this is the first things I request my mother to make for me.  My kids to love it.  Over the years I have tried to master this recipe. 

Ingredient
4-5 potatoes, boiled, skinned and mashed
¼ kg beef or mutton mince
3-4 large onions, chopped finely
3  green chillies, deseeded and chopped finely
6 cloves of garlic chopped finely
1 inch ginger chopped fine
Whole spices – 6-8 black pepper/1 pc cinnamon/4-5 cloves/4-5 cardamoms
2 tablespoons fresh coriander leaves, chopped finely
1 tablespoon Vinegar
Oil for frying/  Breadcrumbs /1 egg, beaten lightly
salt

Preparation
Heat a teaspoon of oil in a pan and add the chopped onions.
Fry the onions until they turn brown. Add the whole spices
Add the ginger, garlic, green chillies and continue to fry the mixture until you get a nice aroma.
Now add the mince, salt and fry the meat until browned lightly. Add the Vinegar. At this stage depending upon how spicy you want it you can add a ¼ tsp of powdered garam masala or pepper
Continue to cook on slow fire till the mince is almost dry and cooked.  Add chopped coriander leaves and mix well. Keep aside to cool.

Take a portion of the cooled mashed potato and flatten it to form the shape of your palm. Cup your palm to form a pocket.

Add a tablespoon and a half of the cooled mince mixture to the centre of the flattened potato pocket. Enclose the filling by closing up the sides of the potato and cover the filling completely.  Continue with the rest of the mashed potato and mince.

Heat a some oil in a frying pan. Roll each of the potato chops in beaten egg and then breadcrumbs.

Fry until the each potato chop is golden brown.
